Brillat-Savarin is a triple cream cheese with an indulgent taste and a velvety smooth texture. Named after the 19th century gastronome Jean Anthelme Brillat-Savarin, the cheese has a white, snow like mould. It is very rich in flavour but also has a hint of sourness. This makes it excellent when pared with Champagne - perfect for Christmas morning drinks!
